What do you get when you put avocado, tomatoes, cucumber & mango in a bowl?
Nom. Nom. Nom. That’s what you get. So, recently, I started making some food intake changes. I even did a three day fruit diet last week. But what opened my eyes was this. I wasn’t stuck trying to live off of grapes and oranges. I realized Avocado is a fruit! A cucumber is a fruit! Tomatoes are a FRUIT??? And then…I discovered a dish that I couldn’t believe I’d missed all my life until now. It was this: A cut up avocado, tomato, cucumber with some salt. I had this meal at least 3 – 4 times. And it was really filling. In some cases I added a pear or mango. And each time it was as good as the first experience. And I was shocked at how little I’d heard of this combination being so good, tasty and satisfying. So, with that I felt I had to share the great news with those like me who’ve been in the dark ages of nom nom nom-iness!

Also, I wanted to provide some hope and a great option to anyone who’d find themselves in the position of scrambling at the last minute to make something for the office or summer holiday potluck.

Here’s the recipe for 1 serving (multiply it based on how many servings you need):
What you’ll need…
1 Avocado
1 1/2 Roma Tomotoes
1/2 Cucumber
1 Fruit (Pear, Apple, Mango – have fun with this option)
Preparation:
Rinse avocado, tomato and cucumber with a super small drop or soap.
Time: 5 mins
Cut up avocado, tomato and cucumber
Time: 7mins
Seasonings:
1/4 Teaspoon of Salt for taste
Note: Mixed the items in a bowl.
